Lemon Cheesecake With Choco Topping

Sementara tengah banyak lemon kat rumah ni, macam-macam resepi lemon nak dibuatnya.. 😛  Last weekend I tried this recipe from here. But I think I should have put more lemon rind to taste the lemon flavor. I also doubled the cooking chocolate to balance the cheese. Apa pun habis cake sampai tak cukup budak2 ni nak lagi.. 😀

The marble dah jadi caca-marba.. eheheh

Lemon Cheesecake with Choco Topping

Ingredients

    • 225g cream cheese, at room temperature
    • 60g butter
    • 80g castor sugar
    • ¾ tsp vanilla essence
    • ½ tsp grated lemon rind (1tbsp if prefer lemon taste)
    • 1 egg yolk
    • 1 whole egg
    • 80g plain flour
    • ¾ tsp baking powder
    • ½ tsp salt
    • 4 tbsp UHT milk
    • 1 egg white
    • ¾ tbsp castor sugar
    • 25g cooking chocolate (I used 50g)

Method

Grease, line and grease again a 18cm round baking tin. Preheat oven at 170°c.

Cream butter, cream cheese, sugar, essence and lemon rind. Beat in egg yolk and egg, beating well in between additions. Fold in flour, alternating it with the milk. Beat the egg white and sugar until just stiff then fold into the creamed mixture with a spatula. Mix until well combined.

Melt cooking chocolate in a microwave-safe bowl on power high for 20 / 30 seconds. Remove bowl and stir well. Leave to cool. Take 1 tablespoon of cooled melted chocolate and mix with 2 tablespoons creamed mixture.

Turn out creamed mixture into prepared tin and pour over this the chocolate mixture.using the pointed end of a chopstick, swirl the surface of the top layer around until a marble effect is created for the topping.

Bake for 50 – 60 minutes, baine marie style. (place baking tin over a larger tin filled up to a third with hot water.) after baking, remove the tin with the water but leave the cheesecake in the oven with the oven door ajar.

Moist cheesecake..

Dah lama simpan resepi ni.. kadang tu tiap minggu buat.. ehehe.. puas hati dapat makan buat sendiri, sedap pulak tu! (puji diri sendiri.. :P) Thank you to my dear friend Kak Nab for this marvelous serimuka!  Ok.. enjoy the recipe..

  • Lapisan bawah:
  • 1 3/4 cwn beras pulut
  • 1 3/4 cwn santan cair 1 sk garam
  • Lapisan atas: 2 cwn santan pekat
  • 3/4 cwn gula-boleh kurangkan jika manis
  • 2 biji telur 3 sb tepung gandum
  • 3 sb tepung kastard
  • 1 sk garam
  • 1-2 sk paste pandan
  • Sedikit pewarna hijau jika perlu

Cara-cara

  1. Lapisan atas: rendam beras pulut selama setengah jam atau lebih. Kemudian toskan dan campurkan santan cair berserta garam,gaul sebati.
  2. Masukkan kedalam microwave dan masak selama 12-15 minit..pastikan setiap 3 minit dibuka dan kacau agar tidak membuak dan hangit. Masa bergantung pada microwave.
  3. Setelah masak, masukkan kedalam loyang dan dimampat kan sedikit.
  4. Untuk lapisan atas, pukul gula dan telur hingga sebati dan kembang(senduk kayu je boleh ). Masukkan garam,tepung gandum, tepung kastard, pandan paste dan kacau hingga sebati.
  5. Masukkan santan dan pewarna hijau. Masakkan sedikit diatas api sederhana. Jgn bg berketul.. Tapis dan tuang ke dalam loyang yg berisi pulut tadi.
  6. Kukus selama lebih kurang 50 minit- sejam diatas api sederhana. Tunggu sejuk baru dipotong makan.
  7. Selamat mencuba!

Jalan-jalan Sabtu

It’s been quite sometimes I haven’t go to kmart.. Yesterday we had a chance to go there before we went to the Coles. Memang x suka bawak budak2 ni kalau pergi sana..coz they got bored n want to running around..so we just bring the 2 small girls with us.. didn’t knew they were doing clearance on summer products! I managed to buy some of kids shoes for $2.50 per pair!

Sayang takde size besar..size Ifa, and Aisyah je tinggal …

*today mak n hubs pergi kmart..corelle 16pcs round set for $49..murah dari outlet!..

Salmon butter lemon

As simple as its name, Salmon fry with flour and topped with lemon sauce.. we bought 1 salmon fish weigh 2kg + yesterday for $28. Luckily the kids love this ‘pink’ fish so much! You can’t deny the goodness of salmon have, no wonder it’s one of the expensive fish.. I like this recipe as it gives you little bit of lemon flavor..I have 4 more salmon recipes to go@!!

Jalan-jalan Sabtu

Dah nak masuk weekend, baru dpt update last weekend punya aktiviti… ehehe

The plan was suppose to go for Barbecue event held by KUAM at Batman park, city center. We drove to the city and reached there around 3 ish pm.. nak carik parking satu Hal..parking rate dia..mak ai..$4 per hour..kalau 2 jam dlm $8..pastu nk habis dah bbq tu..pastu kena menapak lagi satu hal dgn budak2 ni..end up we heading to South Wharf DFO! Parking still kena bayar $4 per hour but if you buy anything in there even a bottle water, you just have to pay half of the rate! It was our first time visiting south wharf,next to Hilton hotel, near Melbourne exhibition center.. Luckily, they have a summer sale ended last Sunday.Most of the shops are giving additional 50% off marked down price!  Most of the shops here are more variety and many US brands than Essendon DFO except they do not have Corelle outlet.. 😛 But their Guess and Cotton On stores are more cheaper than in Essendon, from my observation..

Habiss laaa papa kena belikan untuk budak2 ni handbags! Bukan 1..EMPAT sekali..kalau campur mama dia..dah LIMA handbags sekali.. LOL! 😛

Compare to Essendon, kalau masuk selalu keluar pun tangan kosong..South Wharf pulak, kiri kanan pegang paper bag..baru best skit pergi.. 😛 tapi tak boleh selalu laaa… licinnn poket nanti, ehehe..
