Prawn and green bean stir fry

Sometimes I just have no idea what to cook with prawns other than sambal tumis, tom yam and masak lemak udang. Last week in Coles catalogue, it has a recipe of Chef Curtis on seafood menu. It’s look delicious and I have all the  ingredients in my kitchen. This is not the first recipe I’ve tried, other recipes by him was also fabulous. Will definitely going to do review on Coles recipe in the future.. 😀 😀

Prawn and Green Bean Stir Fry

Ingredients

  • 4 tbsp Coles olive oil, divided -(agak2 je.. )
  • 600 g Australian large raw banana prawns
  • ½ onion, thinly sliced –
  • 150 g green beans, ends trimmed, sliced in half on an angle –
  • 1 chilli, seeded and finely chopped (optional) -(I put 2 cili padi but still not hot.. so put more if you want it hot)
  • 1 tbsp finely chopped ginger
  • 2 garlic cloves, finely chopped –
  • 1 tbsp rice wine vinegar -(I just use normal vinegar)
  • 1 tsp fish sauce
  • 1 tbsp kecap manis , or 1 tbsp dark soy sauce mixed with ½ tsp brown sugar -(I use kicap ADABI 🙂 )
  • ½ tsp brown sugar -(omitted)
  • 1 tbsp Coles sweet chilli sauce
  • 2 tbsp Coles oyster sauce
  • ¼ cup coriander leaves – (sprinkled for serving)

Method

  • Place a large wok over high heat. Once the wok is very hot add 1 tablespoon of olive oil and swirl the oil to coat the entire wok, and then add half of the prawns.
  • Stir fry prawns for about 1 to 2 minutes or until the prawns are semi cooked. Immediately transfer the prawns to a baking sheet and set aside. Return the wok to high heat and repeat with remaining prawns. (Working in two batches will allow the prawns to sear properly and transferring the prawns to a baking sheet prevents them from overcooking.)
  • Return the empty wok to high heat, wipe excess juice and add 1 tbsp of olive oil to wok and cook onions for 1 to 2 minutes or until they have just softened. Add the capsicum, green beans, chilli, ginger and garlic. Stir fry for about 2 to 3 minutes or until the vegetables just begin to so en. Add remaining tbsp of oil if necessary.
  • Return the prawns to the wok and stir fry for 2 minutes or until the prawns are heated through. Add the rice wine vinegar, fish sauce, kecap manis, sweet chilli sauce, oyster sauce and continue to stir fry for a further 1 to 2 minutes or until the vegetables are crisp-tender and the sauce reduces slightly. I added 1/2 cup of water to make it less dry.
  • Divide the stir fry among the center of 4 serving dishes and sprinkle with the coriander leaves. The coriander leaves really gives the extra hit to the dish.. Serve immediately with steamed rice. I just cooked the rice.
